Look for organic, extra-firm tofu, which has a pleasing texture and will soak up the dressing really well.

I just put chili and lime in my rice last night. We were having Mexican food, so it seemed fitting. This dressing looks wonderful. I’ll have to give it a try!

This looks amazing! I would use fish sauce because the one thing I do eat is fresh fish from time to time. I do get it locally up here in Maine where it is wild caught.

Chery, you can simply skip the fish sauce if it is a turn off for you. You can also substitute in something else or just use the recipe as a jumping off idea for your own creation.
